What (and where) to eat?

Just ask the cabbie for recommendations.
You can try Zion Road Hawker Centre. Many many goodies there.
Newton Circus Hawker Centre, try the bbq seafood there. A tourist favourite, might be a tad more expensive than else where but it has better selections.
There a new road side stall that opens in the night along orchard road if you chance upon it. Don't go there, it sux! Its expensive and the food is average.
Old Airport Road Hawker Centre. Many goodies here. I rate the Char Kway Teow here best in singapore. There's a mutton soup here that's very good too.
